UK Food
My newest year-long cooking project is to make a traditional British dish once a week, to improve my cooking, learn more about UK food, and celebrate the foods I grew up with. Hopefully I will do my bit to show my friends that British cooking has wonderful dishes they should try.
Victoria Sponge – A standard. Two round sponge cakes sandwiched with whipped cream and jam, and a little icing sugar sifted over the top. Wonderful to eat when the sponge is good.
Marmalade Cake – Nigel Slater. A perfect tea cake, moist with a nice flavour, and easy to make. Nigel Slater is virtually infallible in all culinary matters.
